I am a huge fan of bananas (the fruit, of course!). They are packed with potassium, which helps you learn more by keeping you alert. They’re also high in antioxidants, and they taste GREAT in so many varieties! What’s not to love?
I usually have a banana a day (you should, too!) in my super simple breakfast smoothie (will post a recipe for that tomorrow). Today, I felt like having something a tad sweeter (while still being health-conscious). I also tossed in some oats and almonds for a more nutritional value, and a slight crunch to this moist loaf.
Here’s a recipe for my Moist Banana-Cocoa Loaf! The serving size is for a SMALL loaf (just enough to curb your cravings).
What you need:
1 ripe banana, mashed
1 egg
7/8 c. flour (for easier measuring, scoop out 3/4 c. flour + 1/8 c. flour)
1/2 c. sugar
1/4 c. vegetable oil
1/8 c. milk (I used almond milk—healthier and still yummy!)
1/2 tsp. baking soda (or 1 tsp. baking powder)
1/2 tsp. vanilla extract
5 tbl. cocoa powder
1/8 c. nuts (optional— I used silvered almonds)
1/8 c. oats (optional)
How to make:
Combine oil, egg, sugar, milk, vanilla, and mashed banana.
Add baking soda (or powder), flour, and cocoa powder.
Combine well for 2-3 minutes.
*Optional: Add the nuts and oats. Stir evenly.
Pour into a greased loaf pan and bake in a preheated 325 degree F oven for 30-40 minutes.
Alas! A moist, healthy banana-cocoa loaf! Go ahead, indulge! (Psst, try spreading some almond butter on your slice!)
